Today I Wish to talk about Kombucha. That is obviously entirely unrelated to these Banana Oatmeal Cookies, but I know you won't mind.

However, for whatever reason, I keep trying it. I Wish to enjoy it SO DANG BAD.

YIELD: about 30 cookies PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 large egg

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 tsp baking soda

1 tsp salt

2 teaspoons ground cinnamon


Preheat oven to 350°F. why not try these out

In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl using an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.

Scrape down the sides of the bowl and then mix in the egg until completely incorporated. Scrape the sides of the bowl again and add the skillet and vanilla.

In a medium bowlwhisk together the flour, baking soda, salt and cinnamon.

Gradually add the bread mixture to the banana mixture and mix until just combined.

Scrape down the sides of the bowl and stir to recombine.

Use a moderate cookie scoop (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and gently press on the shirts of each cookie using the base of a drinking glass. Considering these cookies do not spread considerably, this will give them a conventional cookie form.

Permit the banana oatmeal cookies to cool on the cookie sheets for 5 minutes before removing them to a wire rack to cool thoroughly.
